<p>Look for recipes that use fresh, whole ingredients and that combine protein with healthy carbohydrates. For example, the following recipe for Rio Star Grapefruit &amp; Quinoa Salad combines vegetables and citrus fruit with quinoa, a whole grain that supplies a complete protein.</p>
<p>Quinoa, which is like couscous in texture, contains protein, iron, fiber and vitamin B6, while fresh grapefruit contains vitamins A and C. Look for Texas Rio Star Grapefruit, a red variety that&#8217;s especially sweet. When choosing grapefruit, pick one that feels heavy for its size -; that means that it&#8217;s extra juicy.</p>
<p>Rio Star Grapefruit &amp; Quinoa Salad</p>
<p>Makes Four Servings</p>
<p>Ingredients:</p>
<p>1 Texas Rio Star Grapefruit, sectioned and peeled (reserve the peel)</p>
<p>1 Texas Orange, sectioned</p>
<p>8 thin slices fresh ginger</p>
<p>1/4 cup extra-virgin olive oil</p>
<p>3/4 cup quinoa</p>
<p>1/2 teaspoon kosher salt, plus additional for seasoning</p>
<p>1 tablespoon white wine vinegar</p>
<p>2 teaspoons honey</p>
<p>1 small serrano or jalapeno chile, minced</p>
<p>2 scallions, minced</p>
<p>2 carrots, peeled and diced</p>
<p>2 tablespoons chopped fresh cilantro leaves</p>
<p>Freshly ground black pepper</p>
<p>Directions:</p>
<p>1. Warm the grapefruit peel, ginger and olive oil in a small saucepan over medium heat. As soon as the oil starts to bubble, remove from heat. Set the oil aside to steep for 30 minutes. Strain and reserve the oil.</p>
<p>2. Meanwhile, rinse and drain the quinoa, and follow the package directions to cook. Transfer the quinoa to a bowl and fluff with a fork. Cool.</p>
<p>3. Segment the grapefruit over a bowl, reserving the segments and juice separately. Whisk 3 tablespoons of the grapefruit juice with the vinegar, honey and salt to taste in a medium bowl. Gradually whisk in 3 tablespoons of the reserved grapefruit oil, starting with a few drops and then adding the rest in a stream to make a slightly thick dressing. Season with pepper to taste.</p>
<p>4. Toss the quinoa with the dressing, chiles, scallions, carrots and cilantro. Season with salt and pepper, to taste.</p>
<p>5. Toss the grapefruit segment into the salad, divide among four plates. Serve warm or at room temperature.</p>
<p>6. Serving suggestion: This salad makes a great packed lunch. If you want to serve this salad at dinner, try it with grilled salmon.</p>

			<content:encoded><![CDATA[<p>The 2010 NBA All Star Game took place at the brand new Cowboys Stadium in Arlington, Texas.</p>
<p>The National Basketball Association staged its first All-Star Game in the Boston Garden on March 2, 1951. From that year on, the game has matched the best players in the Eastern Conference with the best players in the Western Conference.</p>
<p>The participants are currently chosen in two ways. The first is via fan ballot, with the leading vote recipients at each position starting the game; secondly the reserves are chosen by a vote among the head coaches of each squad&#8217;s particular conference.</p>

Originally, Aiken planned to try out for the reality TV series The American Race, but went ahead and auditioned for the talent contest to please an encouraging friend. Out of 7,000 hopefuls, the Charlotte, NC, native won the hearts of the judges as well as millions of fans across the globe.Born November 30, 1978, Aiken was singing at an early age. Unlike most young kids, Aiken was confident and ready to impress a crowd. He was already singing the Dolly Parton/Kenny Rogers classic &#8220;Islands in the Stream&#8221; at a local high school dance by age five. Two year later, he was buying albums through a mail-order catalog, eager to get his hands on any kind of music. Aiken&#8217;s vocal talent was blossoming and by the time he reached his teenage years, he was a regular member of the Raleigh Boys Choir. Countless roles in various musicals, (The Music Man, Oklahoma!), stage plays, and playhouse shows allowed Aiken to hone his gift.When it came time to go to college, music wasn&#8217;t Aiken&#8217;s calling per se. He studied special education instead and had dreams of attending William &amp; Mary for a master&#8217;s degree in administration. Before he could further his education, Aiken ended up wooing 21 million television viewers each week from February to May with his sensational singing voice. His rendition of Simon &amp; Garfunkel&#8217;s &#8220;Bridge Over Troubled Waters&#8221; sewed him a spot among America&#8217;s hearts. Although he finished second to Ruben Studdard, Aiken&#8217;s loss was not taken lightly. He landed a deal with RCA through Simon Fuller&#8217;s 19 Recordings Limited within weeks of the show&#8217;s finale.That same month, Aiken&#8217;s debut single, &#8220;This Is the Night,&#8221; made history by going number one on Billboard&#8217;s Hot 100 chart. It sold more than 392,000 copies during its first week, beating Elton John&#8217;s record for &#8220;Candle in the Wind 1997.&#8221; In October 2003, Aiken issued his studio full-length, The Measure of a Man. Once again, the little guy with the big voice made a big splash. The Measure of a Man sold 613,000 copies and went to number one on Billboard&#8217;s Top 200 during its first week of release. His first holiday effort, Merry Christmas with Love, followed in November 2004. The album debuted at number one on Billboard&#8217;s Top Holiday Albums chart, giving Merry Christmas with Love the biggest debut week sales figures for a Christmas album in SoundScan history.
